  • 1 cup (140g) Raw cashews, soaked overnight
  • 4 cups (940ml) Water
  • 2 Organic dates, halved and pitted

Instructions
  1. Drain the soaked cashews and add to a powerful blender with the water and dates. Blend for a few minutes on high until you achieve a smooth milk.
  2. Pour through a nut milk bag into a glass bottle with a lid. Use immediately or store in the fridge for up to 2 days.

This smoothie tastes rich and decadent and so creamy that you won’t believe it’s dairy free. I usually save this one for special occasion breakfasts because it’s a real treat. It’s made with my homemade almond milk that is so worth trying if you haven’t already. Also it’s best to use a frozen banana. See how to freeze bananas in the photos below. Slice and freeze on baking trays lined with parchment paper for at least two hours. If you don’t have any frozen bananas then you can throw in some ice cubes instead.

There is something about the colour of this smoothie that makes me feel healthy just looking at it! It is so vibrant and rich in colour and is such a great way to start the day. As well as that it is packed with super healthy ingredients and so easy to make. To freeze bananas and others fruits, first lay them in slices on a baking tray lined with parchment paper. I like to put avocado in a lot of smoothies. Apart from being a superfood, they are fattening, in a good way. When I started the Specific Carbohydrate Diet (SCD) first I was afraid of losing a lot of weight given the elimination of so many foods. I made a conscious effort to think about maintaining calories so ate foods like avocados, coconut oil and nut flours.   I try to eat an avocado every day-which I don’t find too difficult luckily! Apart from being an extremely nutritious food, they are very high in good fats which is so important especially when you have removed complex carbohydrates from your diet. Today I have a craving for something creamy and delicious and this is what I came up with. It was yummy! It doesn’t keep too well because the avocado will turn brown so it’s best eaten soon after making. My two year old daughter helps me eat mine!
