We started potty training our little girl last week and well I’ll be honest I could do with some chocolate after a long, difficult day! Frozen Date Bliss Balls
Dates, frozen bananas, almond butter and coconut. What's not to love?

  • 15 Medjool dates, halved and pitted and soaked for 30 minutes
  • 1/3 cup (20g) Desiccated coconut
  • 3 tablespoons Almond butter
  • 4 Frozen ripe bananas

  • 15 Medjool dates, halved and pitted and soaked for 30 minutes
  • 1/3 cup (20g) Desiccated coconut
  • 3 tablespoons Almond butter
  • 4 Frozen ripe bananas
Instructions
  1. Mix together the dates, frozen bananas and almond butter in a blender at high speed until they blend well-like a think caramel.
  2. Freeze the mixture for two hours. I just left it in a glass container and covered with cling film.
  3. Remove the mixture from the freezer and scoop into balls using an ice cream scoop.
  4. Dip each ball into desiccated coconut and place onto tray covered in parchment. Freeze overnight like this. In the morning they can be removed and frozen in a freezer-safe container. Enjoy!

I can’t believe I’m going to say this but, I still get carb cravings. Ok there. So I admitted it. When I started the Specific Carbohydrate Diet (SCD) first, I tried to make bread after bread with nut flours leading to constant disappointment. Thyme and Sea Salt Healthy Crackers
A delicious healthy, savoury base for your toppings and dips!

  • 2 cups (300g) Blanched Almond Flour
  • 1/2 teaspoon Sea salt
  • 1 1/2 tablespoons Fresh thyme
  • 1/2 tablespoon Extra virgin olive oil
  • 1 Free range egg

Cook Time 15 minutes

  1. Preheat the oven to 160°C Fan, 180°C, 350°F or gas mark 4.
  2. Mix all the ingredients in a blender until a dough forms.
  3. If you find it easier you can divide the mixture into two balls. Using a rolling pin, roll the dough thinly between two sheets of parchment paper.
  4. Remove the top layer on parchement and using a blunt knife or pizza cutter cut the dough into cracker shapes. Add an extra sprinkling of sea salt if desired.
  5. Bake for 10-15 minutes or until they become a light golden colour.
  6. Allow to cool for ten minutes at least before cutting into crackers.

In my opinion banana and almond butter are a match made in heaven. This is such a simple snack to prepare and one of my favourites.  I always keep a jar of almond butter at my desk in work in case I get hungry! Make sure that the almond butter you buy has no ingredients other than almond butter and sea salt. Otherwise you can make your own but unless you have a very powerful blender it can take some time.
