We started potty training our little girl last week and well I’ll be honest I could do with some chocolate after a long, difficult day! Those of us following the Specific Carbohydrate Diet (SCD) are not allowed to have chocolate so my craving led me to come up with these beauties. And they are goooooood, if I may say so. The biggest problem is trying not to eat them all in one sitting. I cannot believe that a year ago I never ate dates. Now they are pretty much a staple in my diet and I think my life would be a little sadder without them. These also worked great for my daughter as a reward when things were going well, potty-wise!

Frozen Date Bliss Balls
Dates, frozen bananas, almond butter and coconut. What's not to love?

  • 15 Medjool dates, halved and pitted and soaked for 30 minutes
  • 1/3 cup (20g) Desiccated coconut
  • 3 tablespoons Almond butter
  • 4 Frozen ripe bananas

  • 15 Medjool dates, halved and pitted and soaked for 30 minutes
  • 1/3 cup (20g) Desiccated coconut
  • 3 tablespoons Almond butter
  • 4 Frozen ripe bananas
Instructions
  1. Mix together the dates, frozen bananas and almond butter in a blender at high speed until they blend well-like a think caramel.
  2. Freeze the mixture for two hours. I just left it in a glass container and covered with cling film.
  3. Remove the mixture from the freezer and scoop into balls using an ice cream scoop.
  4. Dip each ball into desiccated coconut and place onto tray covered in parchment. Freeze overnight like this. In the morning they can be removed and frozen in a freezer-safe container. Enjoy!
