Ingredients
2 cups (200g)Desiccated coconut
4Egg whites
1/4 teaspoonSea salt
2 teaspoonsVanilla extract**Make sure there is no added sugar.
4 tablespoonsRaw honey
Zest of 1 orange
1/2 cup (75g)Blanched Almond Flour
1 teaspoonBicarbonate of soda
Instructions
Preheat the oven to 160°C fan/180°C electric/ 350°F or gas mark 4.
Whisk the egg whites in a bowl until you get stiff peaks. This took me five minutes with my electric mixer but will depend on your appliance.
Next, add in the honey and mix for another few seconds. Then mix the almond flour, coconut, bicarbonate of soda, salt, orange zest and vanilla in another bowl. Fold the egg whites into the other ingredients and mix well.
Using two dessert spoons, scoop the mixture into lumps onto a baking tray lined with parchment.
