Frozen Date Bliss Balls
Dates, frozen bananas, almond butter and coconut. What’s not to love?
Medjool dates, halved and pitted and soaked for 30 minutes
1/3 cup (20g)
Frozen ripe bananas
Mix together the dates, frozen bananas and almond butter in a blender at high speed until they blend well-like a think caramel.
Freeze the mixture for two hours. I just left it in a glass container and covered with cling film.
Remove the mixture from the freezer and scoop into balls using an ice cream scoop.
Dip each ball into desiccated coconut and place onto tray covered in parchment. Freeze overnight like this. In the morning they can be removed and frozen in a freezer-safe container. Enjoy!
