Raspberry Jam Energy Balls
Delicious raspberry jam & date energy balls packed with natural sugars for a healthy boost!

Ingredients
  • 80 Organic dates, halved and pitted and soaked for 30 minutes*Or 40-45 Medjool dates
  • 2 cups (125g) Raspberries
  • 1/2 orange Freshly squeeed orange juice
  • 1/4 cup (85g) Raw honey
  • 1 1/4 cup (75g) Dessicated coconut
Instructions
  1. While the dates are soaking, make the raspberry jam.
  2. Place the raspberries, orange juice and honey in a saucepan on a low-medium heat. Once it starts to boil, turn down to a simmer and continue to simmer for 15-20 minutes, stirring often.
  3. Pour the jam into a pyrex or other heatproof bowl and allow to cool to room temperature.
  4. In a powerful blender, blend the jam with the dates.
  5. Remove the mixture to a bowl and in another bowl, place the desiccated coconut.
  6. Using a spoon to help, form the mixture into balls and roll each in desiccated coconut.
  7. For best results, place in the fridge to firm up a little before eating.
