Thyme and Sea Salt Healthy Crackers

Ingredients
  • 2 cups (300g) Blanched Almond Flour
  • 1/2 teaspoon Sea salt
  • 1 1/2 tablespoons Fresh thyme
  • 1/2 tablespoon Extra virgin olive oil
  • 1 Free range egg
Instructions
  1. Preheat the oven to 160°C Fan, 180°C, 350°F or gas mark 4.
  2. Mix all the ingredients in a blender until a dough forms.
  3. If you find it easier you can divide the mixture into two balls. Using a rolling pin, roll the dough thinly between two sheets of parchment paper.
  4. Remove the top layer on parchement and using a blunt knife or pizza cutter cut the dough into cracker shapes. Add an extra sprinkling of sea salt if desired.
  5. Bake for 10-15 minutes or until they become a light golden colour.
  6. Allow to cool for ten minutes at least before cutting into crackers.
